Simple Autumn and Winter Pasta Salad
Ingredients
- 3 cups cooked rustic elbow pasta (about half a package)
- 2 to 3 cups chopped local autumn or winter vegetables (roasted squash, sweet potatoes, carrots, kale, cabbage, or roasted onions)
- 1 to 1½ cups cooked beans (optional)
- 3 tablespoons red wine vinegar
- 3 tablespoons olive oil
- 1½ teaspoons zaatar, or more to taste
- Salt to taste
Instructions
- Cook the rustic elbows until al dente, then rinse briefly under cool water.
- Combine the pasta with the chopped local autumn or winter vegetables (squash, kale, carrots or roasted onions).
- Whisk together red wine vinegar, olive oil, zaatar, and salt.
- Toss the pasta with the dressing until coated.
- Adjust seasoning to taste and serve chilled or at room temperature.
