Simple Soft Wheat Pancakes

Ingredients

  • 1 cup soft red wheat flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1 pinch of salt
  • 1 egg
  • 1 cup milk (add an extra splash if batter seems thick)
  • 1 tablespoon melted butter or oil

 

Instructions

  1. In a bowl, whisk flour, sugar, baking powder, and salt.

  2. In another bowl, whisk egg, milk, and melted butter.

  3. Combine wet and dry ingredients and mix gently until just combined. Soft wheat flour makes a tender batter, so avoid overmixing.

  4. Cook on a lightly greased skillet over medium heat until bubbles form and the edges set, then flip and cook until golden.
