Simple Ohio Spelt and Bean Bowl with Zaatar Vinaigrette


Ingredients

•    1 cup cooked spelt berries
•    1 cup cooked black or pinto beans
•    1–2 cups chopped local vegetables (tomatoes, cucumbers, peppers, or greens)
•    2 tablespoons red wine vinegar
•    2 tablespoons olive oil
•    1–2 teaspoons zaatar, to taste
•    Salt to taste

Instructions
•    Cook spelt berries until tender.
•    Warm the beans or serve them at room temperature.
•    Whisk together red wine vinegar, olive oil, zaatar, and a pinch of salt.
•    Toss the spelt and beans with the vinaigrette.
•    Add fresh vegetables on top or fold them in.
•    Finish with a little more zaatar if you like extra flavor.
