Cornbread Mix - Local Millers

Local Miller's cornbread mixes are made from locally grown heirloom wheat and corn, stone milled in small batches to preserve their full flavor and natural nutrition. Unlike industrial roller milled grains, which strip away the germ and bran before adding vitamins back later, stone milling keeps the entire grain intact. The result is a cornbread with a depth of flavor that you can only get from real grain.

By using heirloom varieties grown on Ohio farms, these cornbread mixes celebrate the region’s grain growing heritage while supporting the farmers who keep these traditions alive. Two varieties of Ohio corn available:

• Jimmy Red Corn – Warm red kernels bake into a golden, sunset-colored crumb. The flavor is naturally sweet and buttery, with notes of honey and toasted corn. This heirloom variety was nearly lost before being revived by Southern farmers for its remarkable flavor and depth.
  
  
• Blue Clarage Corn – Deep blue kernels create a rich, rustic hue when baked. The flavor is nutty and earthy, with subtle hints of roasted almond and stone-ground grain. An Ohio heirloom with deep roots in the Midwest, prized for its hearty character and distinctive taste.
  
  
• Silver King Corn – Silver King is an heirloom white dent corn with roots in the late 1800s Midwest, prized for its subtly sweet, mild flavor and tender texture that lets other ingredients shine. Grown by Dresbach Farms in Chillicothe, Ohio, it creates a classic cornbread that is gently sweet, balanced, and comforting. Last year, we had a City Vittles cornmeal comparison at the Westwood Farmers Market and Silver King was the clear crowd favorite. People loved it for its familiar, sweet-and-mild cornbread flavor that everyone loves.

A half package makes a 12-inch skillet, muffin tin, or loaf pan of cornbread; a full package makes a 9×13-inch baking dish
