Danko rye is a Polish variety developed in 1976 by the Polish Plant Breeding Institute in Poznań. Known for its large, plump kernels and high yields, it produces a flour with a bold, earthy flavor and notes of cocoa, coffee, and baking spice. The result is a rich and aromatic flour that gives breads, pastries, and brownies a distinctive depth and warmth.
This flour is excellent for hearty European-style loaves, sourdoughs, cookies, and brownies (danko rye brownies are seriously amazing!), or for blending with wheat flour to add flavor and complexity to lighter baked goods.
